UNO Chicago Grill Berry And Goat Cheese Salad...it's not any UNO Chicago Grill branch that I had this delicious salad. It is THE one located in a town where it holds the dearest part of my heart.

We were on the way to Ohio having our long-anticipated summer vacation
in Jun 2017. After about 4 hours of drive, it was almost dinner time.
We happened to be by Rochester, New York, a town always felt like home
to me. A town I used to come out either on my own or with my family.
In
14 years since I moved over to the States, we came down often to visit
my uncle and aunt. They just moved down south after their retirement a
year ago.
We thought that we would pull into the town and had a
quick ride to walk down our memory lane. Before getting back on the
road again, we decided to have our dinner in UNO Chicago Grill.
As
soon as I opened the menu, the picture of this Berry and Goat Cheese
Salad got my attention. Knowing me, it always takes forever to decide
what to order because everything looks too good to pass. Well, not this
salad. I was so adamant of getting this side dish.
Well, well, well....it was sooooo....soooo....yummy. By the time I finished it, I told my husband, "I can have this salad everyday." For people, like me, love different varieties of food is very difficult to claim to like to have the same dish on a daily basis. So, you can imagine how delicious it was.
Of course, as soon as I got back home, I must make this and share it in our weekly family dinner. Funny that everybody had that skeptical opinion about goat cheese before eating it. Before we knew it, they all fell in love with this creamy delicacy.
I made this same UNO Chicago Grill berry and goat cheese salad 2 weeks on a roll. I tried 2 different dressings.
Both my copycat versions were great. The only difference when I tried it the first time was....the goat cheese gamey taste and smell was still there. For people have strong sense of smell, it could be overwhelming.
The second time, I made the honey vinaigrette dressing which the restaurant claims to use. Aha....that was it. It blends perfectly with the goat cheese. It even covers the slight gamy smell.
The original restaurant recipe claims that there are grapes in this salad. But I don't recall there were many. Maybe, 2 tiny pieces....So, I skipped it. Do feel free to add into your salad.

Ingredients
11oz Pre-washed spring mix
1/3 cup Blueberries
3-4 Strawberries (slices)
4 oz Goat Cheese (crumbled)
1/3 cup Walnuts (toasted; stored leftover walnuts in freezer which will extend its shelf live)
1/3 cup Small Seedless Red Grapes (halves)
Dressing
1/4 cup Honey
2-3 tbsp Apple Cider Vinegar
2 tbsp Extra Virgin Olive Oil
1 pinch of each Salt and Pepper
