Never had I thought that I would have such a handful of beef recipes.
The
main reason is because I was surrounded by religious people
(grandparents, aunts and uncles) that they don't eat beef at all.
But my father is a beef lover. Most of my experiences about beef
before moving to the States were from him. Man....didn't we
explore enough restaurants serving beef. You don't even want to know
what we tried.
Cooking beef is most probably trickier than cooking any other meat. How to cook to have tender and juicy beef?
There are several factors involved here:
1. A good piece of meat makes a HUGE difference. (In upstate NY, Hannaford sells the best meat with very reasonable price)
2.
NEVER put salt on a piece of raw beef. I ain't kidding. My mom taught
me this tip since day one I stepped into her kitchen. After several
trial and error, it is TRUE.
3. Are you cutting the meat against its
grain? The best way to cut it....tilt your knife at a 45 degree angle
and cut against the grain.
4. Did you cook it in a right way? Some part of the beef needs just a few minutes to cook. Some only needs a few hours.
