With A Traditional Chinese Twist
If you have tried my other recipe, simply sauteed broccoli, I am sure you will love this one, too.
The main difference of these 2 recipes is the dressing. This recipe has a very traditional Chinese ginger scallion dressing to give it a punch on the flavor.

My Childhood Story of Scallion
Chinese call Scallion "Chung" which have the same pronunciation of "clever"
Did I say traditional? In fact, this is like a everyday dressing to Chinese.
When I was a kid, I couldn’t stand the texture of scallion. I still remember my mom kept telling us, “Eating ‘Chung’ (both "Scallion" and "Clever" have the same pronunciation in Chinese) makes you smarter.” I guess when mom told you something repetitively, you finally would fall for it. Next, my acceptance of scallion texture hit me hard. I am addicted to this dressing that I could put it in any dish. And I mean any....

Fresh Ginger vs Ginger Powder
Replacing fresh ginger with ginger powder for this traditional Chinese dressing is perfectly fine
Fresh ginger is difficult to find in my area, except driving an hour going to the Chinese store to buy it. Therefore, I used ginger powder. But if you have fresh ginger on hand, feel free to grate 1-2 tsp for this dressing.
Simply Sauteed Cauliflower with
Ginger Scallion Dressing Recipe
Ingredients
2 Heads Cauliflower (cut into florets)
2 tbsp Extra Virgin Olive Oil
1 tsp Salt
1 cup Water
Dressing
1 bunch Scallions (chopped)
1/2 tsp Ground Ginger Powder
1 tsp Salt
1 cup Canola Oil
- Transfer cauliflower into a big deep skillet
- Top the vegetables with salt, extra virgin olive oil and water (in this order)
- Turn heat to high and cover with lid
- Cook about 4-7 minutes until steam is pushing the lid
- Stir and continue cooking uncovered until crisp tender
- Transfer to serving plate
- In a small skillet, add 1 cup of Canola Oil with high heat
- While waiting, combine the rest of dressing ingredients and seasoning into a heat resistant bowl
- When you see bubbles are coming up in the oil, turn off heat
- As much as you can to stretch out your arm to stand back while you are holding the handle of the skillet to pour the hot oil into scallion mixture
- You will hear a lot of sizzling sound (yes, it is music to your ear. I l.o.v.e. it!!!!)
- Stir well to combine dressing
- Serve ginger scallion dressing along with cauliflower or add on top of vegetables
Simply Sauteed Cauliflower with Ginger Scallion Dressing Steps with Photos
Add cauliflower florets in a cold, big and deep skillet/Dutch oven
Add salt, oil, water and cover to cook at high heat
Cook about 4-7 minutes until steam is pushing the lid
Stir and continue cooking uncovered until crisp tender
Chop a bunch of scallion which is about 6-8 of them
Add the rest of dressing ingredients, i.e. salt and ginger powder
Heat 1 cup Canola Oil at high heat until it bubbles
Stand back while you are holding the handle of the skillet to pour the hot oil into scallion mixture
Stir to combine
Add dressing on top of cauliflower or serve along the vegetables
