Roasted Pork Loin Recipe

Roasted pork loin recipe is one of the cheapest and easiest meal to serve a big crowd.

I love garlic Parmesan flavor in almost everything. If you love big flavors, but not a fan of hot and spicy dishes, this is for you.
TIPS & TRICKS
Since my family is not an onion fan, I replaced it with celery ribs. If you choose to use onions, use 2 medium size or 1 big yellow onion and cut into wedges.
If pork loin is not cooked through after checking with meat thermometer, cover it back with foil and cook it again in the oven with 15 minutes increment until meat is cooked.
Roasted Pork Loin Recipe and Directions
Ingredients
4 lbs Boneless Pork Loin
1 lb Baby Carrots
2 lbs Baby Yukon Potatoes
6-8 stalks Celery Ribs (cut about 3-4” long)
For Marinade
1.5 tsp Garlic Powder
1/3 cup Grated Parmesan Cheese (use the one in pasta aisle; not the freshly grated one)
1 pinch of Red Pepper Flakes
1/2 tsp Italian Seasonings
1 tbsp Dry Parsley Flakes
1 tsp Salt
1/4 tsp Ground Black Pepper
For Gravy
3 tbsp All-Purpose Flour
3 tbsp Butter
2 cup or 1 14-oz Can Chicken Broth
1 tsp Garlic Powder
1/4 cup Freshly Grated Parmesan Cheese
1/2 tsp Italian Seasonings
1 tbsp Dry Parsley Flakes
Salt and pepper to taste
Directions
- Combine marinade ingredients into a big mixing bowl and add pork loin. Use your hands to cover and massage the meat with marinade. Cover bowl with plastic wrap and chill meat overnight.
- Let meat sit in room temperature for an hour before roasting.
- Preheat oven at 425F.
- Line a roasting pan with foil for easy clean up later and transfer meat into the pan.
- Roast meat uncovered for first 35 minutes.
- Add all vegetables into the same pan with meat and cover with foil. Continue to roast for another hour until meat reaches instant temperature 170F on meat thermometer.
- Take everything out of the oven and let it rest in room temperature for 8-10 minutes.
- While waiting, make roux. In a medium sauce pan at medium high heat, whisk to combine flour and butter. Let roux cook for about a minute. When it starts bubbling, whisk in chicken broth until gravy is thick.
- Stir in garlic powder and Italian seasonings. Stir in Parmesan cheese. Once it is melted, stir in parsley flakes; then salt and pepper to taste.
- Carve meat and serve gravy along and enjoy.
Roasted Pork Loin Recipe Steps with Photos
Combine all marinade ingredients together in a big mixing bowl.
Massage meat with marinade and chill in the fridge overnight.
Transfer meat to a foil-lined roasting pan and roast for 35 minutes uncovered.
Looking really good already! But there is another hour to go.
Add vegetables and cover with foil. Continue to cook everything in the oven for anther hour.
Rest in room temperature for 8-10 minutes before carving.
While meat is resting, combine butter and flour in a medium saucepan.
Whisk to combine to make roux.
Whisk in chicken broth until gravy is thick.
Add garlic powder and Italian seasonings.
Whisk in freshly grated Parmesan cheese.
Stir in dry Parsley flakes.
Salt and pepper to taste gravy.
Carve meat.
