We always have homemade spaghetti sauce leftover. If you have read my recipes, I am sure you know by now that throwing food away is the last thing I want to see and do. So, turning the leftover to some kind of new dishes is always an accomplishment, in my opinion.
I must admit that every bite of these 2 recipes makes me miss home more. Hope you enjoy as much as I do!
TIPS & TRICKS
One of the main reasons why these 2 recipes are put together, instead of 2 separate ones, because they basically use the same ingredients, but different cooking methods. One recipe uses freshly steamed white rice. The other one uses fried rice. If you are a big fan of fried rice, I highly recommend you to cook more steamed rice. Save the leftover for the next spaghetti sauce with rice recipe.
I always use homemade spaghetti sauce because there is always some leftover. Feel free to use store-bought ones.
You can pick vegetarian spaghetti sauce to make these spaghetti and rice recipes purely vegetarian.
In some Hong Kong cafes and fast food shops, they sprinkle some shredded cheese on top. It's totally optional.
Low-Carb Way to Serve This Recipe
If you are on diet, don't worry. There is a way for you to enjoy this recipe without consuming tons of carbs. Use this cauliflower fried rice recipe as the base and add spaghetti sauce on top. You will be amazed that the flavor and texture is almost the same as the original recipe. Best of all, this version has more fiber to make it guilt-free.
Recipes for Leftover Spaghetti Sauce with Rice 2 Ways and Directions
Recipe 1 - Spaghetti Sauce with White Rice and Sunny-Side-Up Eggs
Ingredients
16oz (about 2 cups) Spaghetti Sauce (homemade or store bought per your preference)
2 Cups Long Grain Rice
3 Cups Water (or broth if you want more flavor in the rice)
4 Eggs (One egg per serving)
2 tsp Extra Virgin Olive Oil
Directions
- Rinse rice very well. Then combine both rice and water in a medium sauce pan. (This will make about 4 cups of cooked rice. If you want to have leftover rice for fried rice later, double the quantity.)
- Bring the pot of rice to a boil (it will take about 5 minutes to boil. Pay attention and do not let it boil over).
- Turn down heat to medium low and let it simmer for 20 minutes.
- While waiting, in a separate sauce pan, warm up the sauce in low heat.
- About 8 minutes before rice is ready, preheat a big skillet and add 2 tsp oil. Cook 4 eggs sunny side up (or to your preferred doneness)
- To assemble, separate rice onto 4 serving plates, top it with a ladle of spaghetti sauce and finally add a sunny-side-up egg for each plate. Enjoy immediately!

Recipe 2 - Spaghetti Sauce with Fried Rice
Ingredients
16oz (about 2 cups) Spaghetti Sauce (homemade or store bought per your preference)
4 cups Cooked Rice (cool overnight)
3 Eggs
1-3 tbsp Extra Virgin Olive Oil (divided)
A splash of Light Soy Sauce
A splash of Dark Soy Sauce
Salt and Pepper to taste
Directions
- In a sauce pan, warm up the spaghetti sauce in low heat.
- In a separate deep, big skillet, preheat it with 1 tbsp oil.
- Add rice and cover it to let it cook for 5-8 minutes (may need to use spatula to break it up regularly) until it is completely loosened (turn down the heat if necessary). You may need to add 1-2 tbsp more oil into the rice mixture. (When rice is warm through, you should see the grains of rice bouncing off from the bottom of the skillet.)
- Add eggs on top of the hot rice directly and stir vigorously until egg is set. Add soy sauces; salt and pepper to taste.
- Divide fried rice into equal portions among 4 serving plates and top it with spaghetti sauce. Enjoy immediately!

Transfer a serving on a plate
Add spaghetti sauce on top
