This pumpkin spice bread most probably is the best you ever made and had. The combination of the spices and the proportion of each is just perfect.

I brought it to work. First thing people asked was, "Did you make out of fresh pumpkin?" That's how good this pumpkin bread recipe is. But you don't need to go through all the craziness to make a pumpkin bread, but a can of pumpkin puree.

Some people described it as a spice cake which was the reason why I named it as "spice bread".

It was a twist of a zucchini bread recipe given by my former co-worker's sister. The bread is so moist. At that time, I had all the spices on hand (I got them all at different times due to different recipes). Got nothing to waste, I started to develop this recipe.

A couple years ago, my another co-worker, a very health conscious person, asked me for this pumpkin bread recipe to make 2 loaves for Thanksgiving. She told me she cut down the sugar to 1 1/2 cups.

Through my experiments, I realized that if you are going to eat the bread plain without cream cheese, maybe with a little bit of butter, less sugar works out perfectly fine.

However, if you plan to put cream cheese frosting on top, 2 cups of sugar as this recipe instructed is definitely needed. Otherwise, the cream cheese will make the bread taste like "blah".

I know...you are thinking I am asking you to put more sugar into your body. But here is the deal, as long as you share this pumpkin spice bread with friends and family instead of eating it all by yourself, there is not much sugar at all.  Enjoy!

Note to parents: I made this pumpkin spice bread with my 5-year-old son.  The nice thing is that I handed him the ring of measuring spoons and explained to him what each is about.  There are so many spices here in this recipe.  Every time when I need to add a spice into the bowl, I asked him to look for the right measuring spoon. 

By the end of going through the ingredient list, he was perfect to every one of them.  Although it takes much longer to get your bread done, this is a great way to have some quality time with your children.  Besides, it gives them a wonderful head start of maths.  To little kids, this is a much interesting way to learn something boring.  Have fun!




Pumpkin Spice Bread Recipe and Directions

Dry Ingredients

3 Cups Flours
2 Cups Granulated Sugar
¼ teaspoon Baking Powder
1 teaspoon Baking Soda
½ teaspoon Salt
½ teaspoon Ground Ginger
1 teaspoon Ground Cinnamon
¼ teaspoon Ground Nutmeg
¼ teaspoon Ground Clove
½ teaspoon Pumpkin Pie Spice
½ teaspoon All Spice

Wet Ingredients
1 Can (14oz) or 1 ½ Cup Pumpkin Puree
½ Cup Apple Sauce
3 Eggs (beaten)
1 Cup Vegetable or Canola Oil
1 teaspoon Vanilla Extract

For dusting the pans only
Non-Stick Cooking Spray
2 tablespoon Flour

Cream Cheese Frosting Only
1 (8oz) Cream Cheese in room temperature
1 cup Sifted Powdered Sugar
6 tablespoons Butter in room temperature
1 teaspoon Vanilla Extract


Directions

  1. Mix wet and dry ingredients separately in 2 bowls.
  2. Pour the mixture of wet ingredients into the bowl of dry ingredients; about ¼ of the wet ingredient at a time and mix well.
  3. Dust the bread baking pans with cooking spray and 2 tablespoon flour.
  4. Pour the batter into the pans evenly.
  5. Bake at 345F oven for 45-60 minutes or until toothpick inserted into the center and comes out clean and dry.
    (If the toothpick comes out wet, bake the bread for another 5-8 minutes.  Continue the same steps until the toothpick comes out clean and dry.)
  6. Serve bread warm or cold.

Pumpkin Spice Bread with Cream Cheese Frosting

  1. If you plan to put cream cheese frosting on top, let the bread cool completely in room temperature
  2. Beat cream cheese, powdered sugar, butter and vanilla extract in small mixing bowl until smooth
  3. Transfer the cream cheese to a bowl or an air tight container (for easy storage) and serve along with the bread
