Pineapple Ham Breakfast Casserole
Leftover Ham or Deli Ham
Still Gives The Same Great Flavor
Leftover pineapple ham breakfast casserole doesn't mean you can only make this delicious crowd pleaser with ham leftover. But you can also replace it with deli ham.

Who doesn't like the combination of ham and pineapple? The saltiness from the ham and the sweetness from the pineapple is addicting. You can put them on pizzas, fried rice, pasta, serve them as finger food or as an entree. The options are endless.
As mentioned earlier, this recipe was created in order to use up the leftover. Believe me, even if you all had a big ham dinner the night before, your family will still enjoy the dinner without any complaint. Enjoy!
Ingredients
1 can (20 ounces) Sliced Pineapple (cut into chunks and drained)
2-3 cups Ham leftover from Baked Ham recipe; diced (or pre-diced ham from the deli section)
12 Eggs (beaten)
2 cups Shredded Cheddar Cheese
1/2 teaspoon Dried parsley
1 cup Milk
2-5oz Bag Seasoned Croutons
2 teaspoon Hot Sauce (I used buffalo wing sauce)
No-stick Cooking Spray
1 teaspoon Salt
1/2 teaspoon Black Pepper
- Coat a 13 x 9 baking pan generously with cooking spray
- Layer the ingredients in this order: croutons, ham, pineapple, cheese and parsley
- In a separate bowl, combine eggs, milk, hot sauce, salt and pepper together
- Pour the egg mixture into the casserole and try to cover every corner with the mixture as best as you can
- Cover it with aluminum foil or plastic wrap and chill in the fridge overnight
- On the day of serving , take casserole out to sit in room temperature for an hour
- Preheat oven at 350F and bake the casserole for 45-50 minutes until knife inserted in the center and come out clean
- Let it rest on the counter for 5 minutes and enjoy
