This was a recipe that I put together at least 10 years ago. Back then, I used fresh clementines and homemade balsamic glaze. For sure, the recipe nowadays is more convenient. But if you find that making it from scratch with fresh ingredients is more appealing, go for it.
When I originally made this recipe, I used romaine hearts. Instead of cutting the vegetables into bite size, take the leaves off one by one carefully and keep each intact. Line romaine whole leaves around the salad bowl or stand them up if the side of the bowl is straight. Then, add orange, sausage and glaze on top to serve. I must say that the plating is S.U.P.E.R.B.
To make homemade balsamic glaze, you will need 1/2 cup balsamic vinegar, 2 tbsp honey, salt & pepper to taste. Combine all ingredients into a non-reactive small saucepan and bring it to a boil at medium heat. Turn down heat to low and simmer until glaze is thick enough to coat the back of a spoon (about 5-8 minutes)
I used spicy sausage in this orange salad recipe. Do feel free to switch it to a milder flavor.
