One Pot Rotisserie Chicken Veggie Pasta with Sage Sauce

This one pot meal with chicken is surely one of the greatest meals for the short order cooks.  Store-bought rotisserie chicken and veggie pasta adding more fiber in this easy dinner.  If you love carbs like me, this pasta recipe should fulfill your craving.

One Pot Meal with Chicken Recipe and Instructions

Ingredients

1 pound Veggie Farfalle (I use the Barilla “Carrots and Squash” one) or any short pasta
1 Store-bought Whole Rotisserie Chicken (skinned, boned and shredded) with juice or make your own
1 teaspoon Dried Parsley Flakes
1 ½ teaspoon Ground Sage
1 teaspoon Onion Powder
½ teaspoon Garlic Powder
2 tablespoon Butter
2 tablespoon Extra Virgin Olive Oil

Seasonings

1 Pot of Water
1 ½ teaspoon Salt (divided)
½ teaspoon Black Pepper
1 tablespoon Canola Oil

  1. Bring a pot of water to boil
  2. Add 1 teaspoon salt, canola oil and pasta
  3. Quick stir and cook until al dente; drain
  4. While waiting, preheat another pot at medium heat
  5. Add butter, extra virgin olive oil, sage, garlic and onion powder
  6. Stir to combine
  7. Add chicken with juice, ½ teaspoon salt and black pepper
  8. Add more extra virgin olive oil if needed
  9. Stir in pasta and toss to coat
  10. Add parsley flakes for garnish and serve
