No-fry breakfast snack taquitos...well, I guess the name just says it all. It is great for breakfast and snack. How many times you wish you could grab something for your little one(s) and/or yourself to get out of the door asap? How many times you wish you could have something to munch on to hold you over until lunch or dinner comes? This is a great sustainable recipe to fulfill all these requirements.
I saw a lot of awesome recipes out there with tortillas. People like something different and eat with their hands. So, it made me to think, "What can I do differently with a piece of tortilla in hand?"
The more I think about it, the more I realized that soft tortilla actually has an advantage compared to bread....it doesn't make a lot of crumbs or get too messy. Of course, if somebody is messy, he/she can always find a way to make a mess. You know what I mean.
As this idea of breakfast started to form, I started to think about that it would be another great on-the-go recipes.
I purposefully did an experiment of making this no-fry taquitos 16 hours ahead of time to see if they will get soggy or dry out on me. Great thing is that it doesn't get soggy at all.
The tortillas sustain the texture very, very well. But they must be wrapped under plastic or sealed container to keep them from drying out.
If you want to feed a big crowd by presenting a "bigger" plate of food, cut up these no-fry Taquitos into big chunks and make them as pinwheels.
Ingredients
9" Flour/Wheat Soft Tortillas
Peanut Butter
Nutella/other chocolate spread
Instructions
Get your assembly line ready
Spread peanut butter on half of a tortilla
Spread Nutella or chocolate spread on the other half of the tortilla
Have either half covered with spread facing you and start rolling towards the other end
As you roll it towards the other end, you will know why you need to leave the edges not covered with spread
Repeat from step 1 for the rest of the ingredientsIngredients

Jam/Preserves/Jelly
Using wheat tortilla this time
Roll from the jelly side towards the peanut butter side. You can start the peanut butter side first, too.
Start from step 1 for the rest of the ingredients or have your kid(s) make together with you
Tried to cut the taquito across and make pinwheels. Look pretty messy. But this could make a cute and big presentation when serving a big crowd
The mini-pinwheels are very cute. If you have young child(ren) passed toddler stage, you may try this out.My son loves pepperoni and cheese. He literally put these 2 ingredients in almost everything. This is the reason why I made this one.
Since the goal of this recipe is to grab and go and no mess, I would recommend to skip the marinara sauce. But it is really up to you. If you prefer to have it, I highly recommend to have the sauce in the to-go cup or container for dipping.
Quantity of ingredients listed here is for making ONE taquito only. Multiply the amount by the number of taquitos you plan to make.

9" Flour/Wheat Soft Tortillas
2 slices Sandwich size American White Cheese
2 slices Sandwich size Pepperoni
Skipped the sauce in the taquitos because I wanted to stay away from the mess. Highly recommend you to use sauce for dipping only.
Hold it tight for a few seconds to keep it unroll on you
Making pinwheels out of this taquito is pretty cool
