I heard a lot of raving about how good cream of mushroom and pork chops are. But most of the time, I found that the meat is cooked in a slow cooker or low heat on the stove top. Immediately, my mind went to, “The meat is so lean. It’s going to be like chewing sandpaper.” Not until one day that I had extra thick boneless pork chops that I had to either cook them all or send them into the garbage then I developed this recipe.
If you have been following my Keto diet journey, you may have known already that I stick with Keto/Low-Carb meal ideas. I only have one cheat meal a week to reward myself. So, this low carb pork chop recipe was specifically made to fulfill my diet need. The best of all, you only need 3 ingredients and about 30 minutes to get dinner on the table.
Some people may use pork tenderloin or pork loin for this recipe. If that’s the case, make sure to slice the meat up. Half an inch to 3/4 of an inch would be the most ideal thickness.
This recipe uses high heat to quickly sear the meat in order to lock the juice inside. So, it's a quick cooking meal.
You can DIY to cut your own thick-cut boneless pork chops. Refer to the tips in this past newsletter issue. Not only you can customize the cut of your meat, but also save a ton of money.
The thickening agent of this low carb pork chop recipe is cream of mushroom. But it still needs a bit of water to thin out a bit. Instead of wasting the leftover inside the can, I use that same can for measuring out the water. While the water is in there, it rinses out all the goodie of the condensed soup inside the can.
Mushroom lovers, are you thinking of adding more mushrooms into this low carb pork chop recipe? Yes, you sure can. Since this is a quick cooking dinner, I highly recommend to go with canned mushrooms. It will cut down time in browning the fresh ones. If you decide to do so, use one 8-oz can of mushrooms. Drain the liquid first and add mushrooms into the pot together with the cream of mushroom soup and water.
This is a perfect recipe to serve carbs, such as rice, mashed potatoes and/or pasta on the side. Your family most likely would appreciate you doing so. Since this pork chop dinner will be done sooner than other side dishes mentioned above. I would highly recommend you to prepare and/or cook any one of these side dishes first before starting this low carb pork chop dinner.

8 Thick Cut Boneless Pork Chops (about 1.5 lbs total)
1 bag (2 lbs) Frozen Green Beans
1 can (26 oz) Cream of Mushroom Soup
1/2 can of Water (use the soup can to rinse out all the remaining goodie inside the can. Nothing goes to waste.)
2 tbsp Extra Virgin Olive Oil
1 tsp Himalayan Pink Salt
1/2 tsp Freshly Ground Black Pepper
