You know when you tried out an existing recipe which didn’t work as it claimed is very disappointing, right?

But some are worthy of a little effort and time to make some adjustments and/or  improvements.  This is one of those recipes.

Since my little one made the first batch, we made another 6 batches within the next 3 months.  How could I resist, especially when my little one told me one day, “Mom, I am a pro.  I can do it.”  And your hubby was cracking up badly after hearing that conversation. 

Everybody loves these lemon cake mix cookies.  Those batches were made to bring to church for bake sale.  Some of our church goers love them so much that they bought the whole box of cookies right away before the sale started.

Different Cake Mixes & Tips

I have been buying the cake mix whenever it was on sale in the store.  After making so many of them, I started to realize that there are 2 very different kinds of cake mix which would make a difference on your cookie texture and cook time.

So, let’s look at what these 2 cake mixes are:

  1. Regular lemon cake mix
  2. Super moist cake mix (This is specifically listed on the box.  You will never miss it.)

True to its name, the super moist brand is moist and easy to mix together.  It doesn't have many lumps as the other cake mix.  Because of its moisture, it may take longer to bake to your liking.

On the other hand, the regular lemon cake mix is drier.  When I first saw the dry lumps, I thought that my little one didn’t mix it well enough.  After a couple batches, I then realized that dry lumps are always there no matter how you mix the ingredients together.

So, here is my recommendation when it comes to regular lemon cake mix.  Use a fork throughout the stirring process.  When you see the lumps, use the fork to break them apart.  You may need to put your batter aside for 10 minutes to allow everything blend together.  Then, stir it again to break down the rest of the dry lumps.

I know you are asking me why do you need to go through this trouble?  It is because it will easily bake the cookies to your desired texture.



Lemon Cake Mix Cookies Ingredients and Directions

Ingredients

1 package Lemon Cake Mix
1/3 cup Canola oil
2 Eggs
1 pack Lemonade Powder Mix

Directions

  1. Combine cake mix, oil, lemonade powder mix and eggs in a mixing bowl.
  2. Use a small ice-cream scoop or about 2 tsp of cookie dough and roll to a ball shape.
  3. Transfer to a parchment paper-lined baking sheet (I use a 12" x 17" size baking sheet) leave about 1.5" - 2" space around each cookie dough.
  4. Bake at 350°F for 10-12 minutes, transfer cookies to wire rack or a flat surface to let cookies cool to room temperature and serve.
  5. May need to separate 2-3 batches.
