Why I made Grape Tomatoes Mozzarella Cheese Wild Rice Salad because our regular family dinner was on that night.

It was very hot that week.  I definitely wanted to have something on the grill instead of "cooking up" the house.  I decided to have the Shrimp on the Barbie.  But what could I make to go by that seafood without shedding so much sweat?  Thankfully, I always have wild rice mix in my pantry.

Usually it doesn't take me very long to come up an idea.  I was actually very surprised that it took me 2 days before this recipe came up in my mind.  All in all, everything turned out perfect in our family dinner as always.  Everybody enjoyed the food, themselves and with each other.

My only comment of this recipe for you is that save tomatoes, cheese and avocado until the last minute to add into the salad.  Enjoy!

Grape Tomatoes Mozzarella Cheese Wild Rice Salad Recipe and Instructions

Ingredients

1 cup (137g) Regular Wild Rice Mix (refer to One-Pot Sausage Raisins Wild Rice about the difference between regular and par-boiled wild rice mix)
1 pint Grape Tomatoes (cut into halves)
1 tub (12oz / 340g) Pearl Fresh Mozzarella Cheese (drained)
1/4 cup (54g) Store-bought Italian dressing
2 Avocados (sliced)
Salt and pepper to taste

Instructions

  1. Follow the package instructions to combine water and rice and cook until al dente.
  2. Stir in Italian salad dressing.
  3. Cool in room temperature and chill in the fridge overnight.
  4. Stir in tomatoes and cheese and transfer to serving plate.
  5. Garnish with avocado slices and serve.
