I wrote this easy veggie meal recipe a few years ago.  

This one was written back in 2009-2010.  Many of my recipes written around or before that period of time are still not published. (So stay tuned for more coming!)  The unfortunate thing was that I lost tons of pictures during the crash of my computer back then.  So, I have to remake many of them to take pictures.  I made this one very often during and post pregnancy.  

I ate a lot more spinach than any other time because of its nutrition and vitamins which are very good to the baby.  If you are not big on vegetables, you will love this tasty soup recipe.




What Are Meatless Meatballs?

So, what are meatless meatballs?  I know you are going to ask.

If you have never tried this ingredient before, I encourage you to give it a chance.  Most of them are made of wheat protein, soy protein, legume and so forth. 

The meatless meatballs do have a very similar texture of meat and mixed with different kinds of spices.  Different brand tastes differently due to the combination of spices.  Compared to regular meatballs, the meatless ones could be spicier.

Another side note, unlike any other soup, liquid ratio in this 20-minute spinach cannellini bean meatless meatball soup recipe is very low.  Every bite is packed with vegetables.  Feel free to double the quantity.  I can guarantee you that this soup fills you up and make you feel awesome even though you could be full to your guts by the end of dinner.  ENJOY!

TIPS & TRICKS

When I originally made it, I used chicken broth and regular frozen meatballs.  I stumbled on frozen meatless meatballs once and thought that I would give it a try.  Man, oh man....are they good.  

I highly recommend you to give it a try.  But I also understand that you may be a bit skeptical about this ingredient.  If so, just stick with regular meatballs.  There are enough fiber from both spinach and beans in the soup.  Meatless meatball is just a bonus.

Easy Veggie Meal Recipe and Directions

Ingredients

2 Boxes (10oz / 283g each) Frozen Spinach
12 Store-Bought Frozen Meatless Meatballs (feel free to substitute with regular meatballs)
1 Can (15oz / 425g; drained and rinsed) Cannellini Beans
2 Cups (250g) Vegetable / Chicken Broth
1 pinch of each Salt and Pepper

Directions

  1. Bring broth to a boil in a soup pot.
  2. Add spinach and cook until thawed and warm.
  3. Add beans and meatballs.
  4. When it comes to a boil again, turn down the heat to simmer for 8-10 minutes.
  5. Salt and pepper to taste and serve immediately.
