Chorizo Cauliflower Rice...yep, 15 minutes only. How did this recipe come together?
Well, sometimes, I would hit a roadblock during a dry spell. Nothing inspires me to come up with any creative ideas. Man... I hate those moments.
This recipe was the first one coming into mind right after that recession. It was like a light bulb was turned on by a switch. Food in my fridge and freezer came into my mind. That night, I was on a mission to try this recipe.
Man, oh man....as soon as the flavor hit my taste buds, I felt like I was back to my normal self.

I am sharing with you this story because I want to bring this message across. There are ups and downs in life, which is a reality. We may get stuck sometimes. Instead of holding on to it, you may be better off walking away for a while.
If you stumble on this roadblock, just walk away. Take a walk, watch a movie, or do something else that makes you happy and forget everything. Then, suddenly, you will see the light at the end of the tunnel.
Be aware that ground Chorizo is super hot. Some people love it the way it is. Some just can't stand it. If you are in between, I highly recommend you to either use half of the recommended quantity of Chorizo or double the quantity of cauliflower rice. This will cut down the heat significantly.
Another secret ingredient to lower its heat level is sugar. Yep, you heard me. My mom taught me this trick since I first stepped into the kitchen when I was a kid. A little bit goes a long way. Enjoy this delicious quick recipe.
Ingredients
9oz (255g) Ground Chorizo
1-2 Bags (12oz / 340g each) Frozen Cauliflower Rice (depends on how much heat you can take from the Chorizo. If you love super hot and spicy food, 1:1 ratio would be perfect. Otherwise, 1 part Chorizo with 2 parts of Cauliflower Rice. It is always better to have less heat than too much.)
2-4 Eggs (1 Egg for each person)
2 Scallion (chopped)
1 tbsp Canola Oil
A pinch of sugar
Salt and pepper to taste
