Cake mix cookies easy recipe is another twist of using box cake mix.
Do you like the box cake lemon cookies? If you do, here is another box cake recipe for you. This is perfect for holiday seasons. I always make something with chocolate and marshmallow during Thanksgiving and Christmas time. If you are super busy at getting things around, this is a great recipe for potluck, any kind of gatherings or gift idea.

I always love to make festive chocolate marshmallow pops. In the past, I found that keeping marshmallow, small or big, in shape could be challenging. But it is easily solved. All you need to do is to put the marshmallow into the freezer. This step is optional in this recipe. But I can guarantee you that it makes your life much easier. I highly recommend that the marshmallow stay in the freezer overnight. Otherwise, a couple hours will do.
Typically, once the cookies are out of the oven, you would transfer them to a wire rack to cool down. Since we have marshmallow mixed into the cookies, you are going to slice the cookies out of the baking sheet together with the parchment paper and cool them down on a cool surface or kitchen counter top. This will keep the cookies in good shape and not sticking to the rack because of some melted marshmallow.

Ingredients
1 package Devil Food Cake Mix
¾ cup (5oz / 151g) mini-marshmallows (best to freeze them in freezer for at least a couple hours before mixing into the batter)
1/3 cup (2oz / 67g) oil
2 eggs
- Combine cake mix, marshmallows, oil, and eggs in a mixing bowl.
- Using an ice cream scoop or your hand, form golf ball-sized balls of cookie dough and transfer to a parchment paper-lined baking sheet.
- Leave about 1.5-2” (4-5cm) around each dough.
- Bake at 350°F (180°C) for 10-12 minutes.
- It may take about 2-3 baking sheets/batches.
- As soon as the cookies are out of the oven, slide the whole tray together with the parchment paper on a cool surface. Let them cool at room temperature and enjoy! (With the marshmallows inside the cookies, the melted candies will stick to the wire rack. Therefore, everything needs to slice out of the baking sheet together. This will save you from a lot of clean up later.)
