Breakfast pizza on tortilla is a very versatile recipe that you can add whatever ingredients that you have handy into the pizza. You can make it for a to-go meal and eat with your hands. You can also bring it to a coffee time to serve it after church.

I watched this video online and saw a mother teaching her toddler to make this tortilla breakfast pizza. I thought it was so awesome and it reminded me my only son when he was at that age.
So, I thought that I am going to try to make one. The first time was a failure because I didn’t realize that the soft tortilla is the same size of my 8” baking pan. As a result, it didn’t hold the egg in, but making a mess. Thanks to non-stick cooking spray. Otherwise, I would have a hard time to clean up the baked eggs stuck on the pan.
I learned my lesson in a hard way. When I went back to the grocery store next time, I paid more attention to the size of the soft tortillas and bought the 10” one which will form a rim around the pan to make breakfast pizzas.
Yes, you can double this breakfast pizza recipe. Do you have another baking pans? If so, you can add different toppings in each and transfer them all into the oven at the same time. The cook time will be the same. It’s a great get-together breakfast without too much formality. Everybody will just grab a slice and enjoy. You can even skip some disposable plastic wares and plates. Best of all, you can visit with each other while you are all enjoying the food.
There are plenty of flavor of tortillas you can choose. I personally love wheat and low carb. Some do blend in some vegetables, such as spinach and tomatoes. As a result, the colored tortillas will make your breakfast pizzas very beautiful and more appetizing.
Even though I did make breakfast pizza on tortilla in 3 ways, I had never added cheese on top just because I am not a huge fan of cheese. It doesn't mean that it stops you there. There is absolutely some room for about 1/4-1/3 cup of shredded cheese. Half a cup could be too much and next the pizza toppings will overflow in the oven. It will be a mess to clean up.
If you decide to add cheese, be cautious of the cook time. At the end, you need to insert a knife in the middle and come out clean to be sure that it is done. Adding cheese could possibly take more time than usual. If you need to cook a bit longer than the instructions, add another 5 minutes of bake time and check it again.
I shared with you the story earlier about getting a bag of soft tortillas which were too small for the cake pan.
There is always a small section in every grocery store selling kitchen basics, such as baking pans, spatulas and so forth. Pick up one of the bags of soft tortillas and go over to the kitchen gadget section. Measure it against a pan looks similar to what you have at home.
Or, pick up a 10" frying pan and measure the tortillas against it. Remember, the wide opening of a 10" pan is 10". But the bottom of it is only 7.5" in diameter. If the soft tortillas fit into the pan and there is extra going around the rim, you are good to go.
If there is none of the above, look for a pie crust sold in the baking or frozen aisle. Just be sure that deep dish pie crust is normally 9” wide. So, you got the idea, right? Or you would end up like me that I had to finish the “too small” tortillas first before buying another bag.
I had been debating with myself whether I should put up this part of the recipe separately. But then thinking about single serving pizza you always see in the restaurants or frozen section in the supermarkets, I decided to put it as part of the recipe, especially when the number of ingredients and cooking method are about the same.
