Tip/IdeaMethodical Ways to Deep Fry French FriesIngredients5 cups Canola Oil 1/2 lb Frozen French Fries (any kind and any type)
Instructions 1. Preheat an electrical deep fryer for 10 minutes with oil in it. 2. Use deep fryer-friendly spatula to transfer frozen fries into the hot oil gently. Be very careful. Make sure all fries are immersed into the oil. 3. Leave it to cook at least 7-8 minutes. Do NOT stir in between. Leave the fries alone. 4. Use spatula to stir the fries. They should be hard on the outside. If they feel a bit soft, STOP stirring immediately. Let them cook for another 2 minutes so that the fries are intact, not breaking apart. 5. When the second round of 10 minutes are up, the edge of the fries should get light golden color. 6. Transfer them to paper towel-lined bowl and let it rest for a minute. Keep the oil continued to be heated while waiting. 7. Carefully, transfer the fries back into the hot oil and keep stirring for 30-60 seconds until desired doneness. 8. Take fries out and transfer to paper towel-lined bowl again and add salt immediately. Toss to coat and enjoy. TIPS: Certain shape of fries may take longer or shorter to cook for the first round. With that said, the time difference could be 1-2 minutes more or less. Prep Time: Zero Active Cook Time: 10 Minutes Serving: 4-6 Servings
Fun CultureIs Deep-Frying A Preferred Way of Cooking Authentic Chinese Food? Many westerners are under the impression that majority Chinese food is deep-fried.In fact, steam, boil and slow cook are the preferred and mostly used methods to make many traditional Chinese dishes. In fact, I learned it in a hard way why those preferred methods are not always used in American Chinese food because the food colors tend to look “pale” and not crispy on the outside which is the standard from the Chinese perspectives. But for westerners, young or old, crispy and brown on the outside is considered as "cooked through" or "done". That’s culture shock. Chinese love deep-fried food, too. But everyone understands that too much deep-fried food is not good for their health. You may see plenty of deep-fried food during Chinese New Year.
Featuring RecipeBaked Potato Hash | Oven Roasted Paprika PotatoesThis side dish is roasted in the oven, but gives you the same result as it came from a deep-fryer. This recipe was passed down from my mother-in-law and it needs to deep-fry the potatoes. I used to stand in front of the stove top for an hour to make this side dish. But I modified this recipe that no deep-frying anymore, but oven baked. Best of all, it no longer takes "forever" to cook it and still get the same result.Chinese New Year Feast E-CookbookHow to celebrate one of the most important Chinese fesitvals of the year?
