NO-Cook; NO-Bake Breakfast Ideas

Planning breakfast that is no-cook and no-bake is too good to be true. In fact, it is absolutely doable. And I just did it last week.

You may wonder why I talk about hosting a breakfast again. Didn't we cover it last time? Yes. But the difference of this one is that you only need to assemble everything together.

Honestly, in the summer, who does want to stand in front of the stove top or heat up the house with an oven?

Because all dishes here are finger foods, you can actually use this menu to serve brunch or dinner. Still not convinced?

Well, let's go through the menu and the steps together.

Menu

1) No-Bake Lemon Cheesecake

2) Lazy Bum Fruit Salad

3) Cheese Pepperoni and Cracker Tray

4) Veggie Platter with Ranch Dip

5) PB&J NO-Fry Taquitos

The order I listed in the menu could be slightly different from the order of when I put together these dishes. And there are reasons for that. I will explain as I go along.

Cheese Pepperoni and Cracker Tray

Throughout the years, I found that this is a MUST in almost every big gathering or party.

You can easily find a brand that has everything put together for you already. Of course, if you do it by yourself, it is cheaper. Most important of all, that special touch you put into every dish makes a BIG difference to your guests.

I purposefully left the crackers in the package. This will keep them fresh. I recommend you only to take them out before serving.

PB&J NO-Fry Taquitos

Preparing all these dishes, you need a lot of room in your fridge. The nice thing about these Taquitos, you can store them at room temperature. Best of all, the taco sliders won't get soggy.

The day I served this dish, man, oh man, I could not believe how quick they were gone. This is sure a keeper.

I used square glass container with lid to store these Taquitos.

No-Bake Lemon Cheesecake

Before starting the Taquitos, I took out the cream cheese and let it sit at room temperature. In summer time, cream cheese reaches room temperature in less than an hour. Winter time may take longer.

I made a slight twist on this recipe. My original one skips the crust. This time, I used store-bought crust. The rest of the ingredients are the same. Recipe link: No-Bake Crustless Mini Lemon Cheesecake



Lazy Bum Fruit Salad

Depending on when you are preparing this dish before the breakfast / party. If it is a few hours away, you could dump all the frozen fruit into your serving bowl and let it sit at room temperature.

Once it is thawed, you can add the dressing.

I served it the day after. So, I let everything thaw in the fridge overnight. When the fruit bowl was brought to church, the fruit was NOT thawed all the way. Since the service takes 1.5 hours, it sat at room temperature during that time. When it was finally served, the texture of the fruit was PERFECT. Recipe link: Lazy Bum Fruit Salad

Veggie Platter with Ranch Dip

Surely, you can get a tray in the store easily. It is expensive. But there is one thing I don't like is that the vegetables, especially the cut side, are dry.

So, when you prepare your own vegetable tray, try your best to put them together at the very last minute. This will keep them all fresh.

Believe it or not, there are very sturdy plastic serving tray to hold the dip and vegetables. I love them. It was easy to carry and clean up. Here is what I recommend, Plastic Serving Tray with Lid
