Is a Bigger or Smaller Whisk Better?

Size matters. When we make gravy, we may use a whisk or spatula to do a lot of stirring. What I learned last year was that we always thought that the bigger the better.

But when it comes to whisk, small whisk can make a smooth batter quicker and better than any household size one. I was amazed of its power.

The best way to utilize your whisks is when the quantity of your batter or roux combination is still a very small amount, use the small whisk. It will break down the lumps better. When you start to add more than 1 cup of liquid into the batter or roux mixture, you can switch over to the regular household size of whisk. Normally, household size whisk can fit an egg inside the balloon area. This will help you to know what you are looking for. It may be one more thing to wash. But it is totally worthy for doing this extra work.

So, next time when you see a small whisk, give it a try. Don’t underestimate its power.
