Make Your Own Smash Burger Like A Pro

Who doesn’t love a thick and juicy burger? Me, raising my hand. But that’s not the case for my American husband.

For years, my husband always asks for thin burger patties. What drives me crazy is that the “thin” burger patties are dry and burnt by the time it is cooked to his desired doneness. As mentioned earlier, I love juicy burger, not the one tastes and feels like sandpaper.

Not until I saw a video online one day, I was inspired to do it this way to achieve both thin and juicy smash burger. Best of all, I don’t need to buy special tools. Everything is in the kitchen already, just some skills and technique.

Ingredients & Tools

Ground beef (doesn’t matter how much. As long as it’s enough to feed your gang)

Wax/parchment paper (both works. Wax paper is cheaper. So, if you have it at home, it makes it more economical. If you plan on store them in the freezer, parchment paper works better.)

10” Cooking pan with flat surface at the bottom (Make sure the bottom doesn’t have any ridges. If there is none at home, use a rolling pin. If none of the above is available, use a 7" burger press.)#ad

Instructions

1) Separate burger meat by equal portions and roll them up like a ball (mine is about the size of a softball)

2) Depending on how many patties you are going to make. Say 10 patties. Then, you will need 10 pieces of wax/parchment paper + one more. So, totally 11 of them.

3) Get 11 piece of wax paper which is about 12" x 8" for each piece.

4) Lay one piece of wax paper on counter top or any big flat work surface; put the burger on top and lay another piece of wax paper on top. Use a cooking pan pressing it down and move back and forth in circular motion to help the meat spread it out.

5) Take the top piece of wax paper off that you will use the clean side to lay on the counter top.

6) Repeat the last 2 steps for the rest of the burger.

7) To cook it on stove top, cook it at high heat to sear the meat and lock the juice inside. Let it cook about 2-3 minutes and turn over to cook the other side for about 1-2 minutes. Cook a little bit more for desired doneness. Enjoy immediately.

The pronunciation of the first 2 Chinese words from the left are closer to "minced". The last 2 words mean beef.

Chinese may not make a lot of burger. But there are plenty of Chinese recipes using ground beef. We add it into congee, rice, noodles, soup, Chinese meatballs and so forth. The options are unlimited, except dessert.
